PROBLEM TO BE SOLVED: To obtain a DNA capable of carrying out mass production of a levan fructotransferase and useful in a food and pharmaceutical field by allowing the DNA to encode a specific protein. SOLUTION: This levan fructotransferase gene encodes (A) a protein having an amino acid sequence of formulas I or II, or (B) the protein having the amino acid sequence with one or several amino acid deficiency, substitution or addition and having levan fructotransferase activities. Preferably, a levan fructotransferase is produced by culturing a transformant transformed by a recombinant vector including the DNA in a medium. |
