摘要 Disclosed are dry culinary mixes for use in preparing baked goods, especially brownies. The dry mixes employ blends of flour, sugar, salt, leavening, and optionally, shortening and cocoa. The dry mixes further include particular levels of gellan. Surprisingly, inclusion of gellan in the present dry mixes enables consumers to bake a finished baked good of superior quality in terms of structure, volume, and texture.
