Dehydration of mashed potato

Regulation of temperature and time following a predetermined program in a vacuum process to dehydrate fruit and vegetables. A process to dehydrate fruit or vegetables comprises a heating stage which takes place for a predetermined length of time. The process is performed under vacuum and follows a predetermined temperature course. Independent claims are included for:- (1) A drying machine for dehydrating a fruit or vegetable product comprising a series of conveyers (2) A dried food in the form of dried vegetable pieces 2-5 mm in diameter and no longer than 10 mm.
