FIELD: food industry. SUBSTANCE: centrifugal separator has drum accommodating plate holder with set of plates and channel to let out high-fat cream, separating plate arranged over plate set and forming, with drum wall, a channel to let out buttermilk, and cream fatness control screw installed on separating plate. Screw has cylindrical body with axial outlet channel. Additional separating plate is installed under plate set separating plate forming a channel, to let out buttermilk with fine fraction of protein, together with plate installed over plate set. Additional separating plate has hole to bypass part of buttermilk into channel to let out high-fat cream. Body of screw has conical projection on its end face to change passage of hole, and hole to let in part of above-indicated buttermilk into axial channel of body is provided on side surface of screw body.
