摘要 PROBLEM TO BE SOLVED: To solve problems in production attributable to the precipitation of starch-during butter preparation, and improve texture and palatability of a baked product, in wafers produced mainly of starch free from wheat flour, which causes allergy. SOLUTION: A raw material compound mainly composed of starch is compounded with a polysaccharide having a thickening activity, preferably in an amount of 0.1-10 pts.wt. based on 100 pts.wt. of the starch, and wafer is produced from the mixture. It is preferable to add at least one kind selected from water-insoluble dietary fibers, water-soluble dietary fibers that have no thickening activity, and mashed matter or dry crashed matter of vegetables or corms besides the polysaccharide. The amount of addition of these materials is preferably 0.1-30 pts.wt. based on 100 pts.wt. of the starch.
