摘要 Cream cheese is made from skimmed dried milk using a mixture of starting materials comprising 4.5-10 wt.% skimmed dried milk, 28-38 wt.% butter, margarine and/or vegetable oil, 3.1-7.3 wt.% stabilisers, 0.5-1.0 wt.% citric acid monohydrate, 0.5-1.0 wt.% sodium citrate, 0-0.02 wt.% fragrance, 0.7-1.0 wt.% sodium chloride, 0-0.02 wt.% food colour, 41.66-62.70 wt.% water and freeze-dried bacteria. Also claimed is cream cheese made in this way.
