Quaternary ammonium alditol derivatives of formula (I) are new. Z = an aldityl or glycosylaldityl radical, R1, R2 and R3 = 1-4C alkyl or 2-4C hydroxy alkyl, R4-CO- = aliphatic acyl of 2 - 22C atoms, which may be saturated or unsaturated, X = halogen or -SO3-O-R3 where R3 is alkyl as defined above, n = 1 - 4.
