PROBLEM TO BE SOLVED: To obtain the subject additive for pickles that can give pickles of good taste and long open date in no need of food additives as a synthetic preservative, a pH conditioner, an osmotic pressure conditioner by using erythritol as an active ingredient. SOLUTION: The objective pickle additive is obtained by using erythritol as an active ingredient. In the process of producing pickles, erythritol may be added at any step. Further, the erythritol may be added to the vegetable in the stage of preliminary pickling, too. Moreover, erythritol may be added to the vegetables in the stage that the pickling solution is added to the vegetables or preliminarily pickled vegetables. |
