PROBLEM TO BE SOLVED: To obtain a delicious and readily eaten snack food having a protein with a lowered molecular weight and easily broken grains, and further having the appearance of the shape of barley or wheat as it is by germinating the barley or the wheat, kilning the germinated barley or wheat, allowing the kilned barley or wheat to absorb water, removing the excess water from the obtained barley or wheat, steaming the resultant barley or wheat, frying the steamed barley or wheat. SOLUTION: Barley or wheat are germinated and kilned, and further allowed to absorb water by dipping the germinated and kilned barley or wheat into water. Further, the excess water is removed from the obtained barley or wheat, and the resultant barley or wheat is steamed and fried to provide the objective food having malt in a state remaining the shape of the barley or wheat, fried and swelled, and including gelatinized inner starch. |
