发明名称 METHOD OF PECTIN PREPARING
摘要 FIELD: food industry. SUBSTANCE: raw is washed out, pectin extract is isolated and extract is treated with cation-exchange resin and then with anion-exchange resin at ratio of specific consumption of anionite to cationite 1.3-1.4 cm /cm extract. Then dry pectin is treated with ethyl alcohol. Method provides preparing pectin containing high content of galacturonic acid and high complex-forming capacity and can be used for production of foodstuffs for prophylaxis aims. EFFECT: decreased pectin loss, optimal yield of the end product.
