摘要 PROBLEM TO BE SOLVED: To prepare a powdery emulsifier of low melting point or amorphous properties such as polyglycerin fatty ester or the like in which the dispersion and melting properties into water are improved and also provide a preparation process thereof. SOLUTION: A powdery emulsifier is prepared by making sugar or sugar alcohol crystals of particle diameter of 149 μm or undersize adhered on the surface of an emulsifier of low melting point or amorphous properties. In a preparation process for the powdery emulsifier, the emulsifier of low melting point or amorphous properties and sugar or sugar alcohol crystals of particle diameter of 149 μm or undersize are mixed and crushed at the low temperature. At that time, the emulsifier selected out of the groups of polyglycerin fatty ester, sucrose fatty ester, sorbitan fatty ester and organic acid monoglyceride is used.
