PROBLEM TO BE SOLVED: To carry out the sufficient clarifying by simple treating operations and enable the obtaining of the subject liquid excellent in appearance, flavor and keeping quality by heating a pressed juice of a parsley or a celery at a specific temperature, then cooling the heated juice to a specified temperature and removing an insoluble solid matter. SOLUTION: Pressing of a juice from a parsley or a celery is performed by a method for successively carrying out, e.g. washing, fragmenting and blanching treatment of heating at 85 deg.C and then crushing and pressing the juice from the resultant material with a grader, etc. The prepared pressed juice is subsequently heated at 100-130 deg.C by, e.g. plate type heating and then cooled to 0-20 deg.C. An insoluble solid matter aggregated from the pressed juice is finally separated by, e.g. centrifugation. The heating is preferably conducted for about 1 sec to 10 min. The cooling may be either instantaneous cooling according to a plate type or slow cooling with a jacketed tank. The centrifugation is carried out at about 500-1,000 r.p.m. rotational frequency in the case of performing the separation by the centrifugation. |
