PROBLEM TO BE SOLVED: To provide a method for producing a foamable oil-in-water emulsified composition excellent in foaming stability in spite of a short whipping time, good in workability, causing no deterioration in quality even by repeating freezing and thawing and further excellent in freezing resistance. SOLUTION: This foamable oil-in-water emulsified composition is obtained by using an oil and fat having 35-80%/10 deg.C, 10-50%/20 deg.C, 5-30%/25 deg.C and <=10%/30 deg.C solid fat content(SFC) in combination with a specified emulsifier when preparing the foamable oil-in-water emulsified composition by preliminarily emulsifying, homogenizing and sterilizing 20-50 wt.% oily phase and 80-50 wt.% aqueous phase containing a protein component. |
