PROBLEM TO BE SOLVED: To extract a high density coffee liquid at high speed by supplying hot water pressurized by a pressurized hot water supplying device to a coffee powder container, and passing the hot water through a coffee powder layer compressed by a coffee powder compressing device to extract the coffee liquid. SOLUTION: Ordinary pressure, high temperature hot water is generated by a water heating device 2, and sent to a hot water supplying cylinder 4a, while a driving piston 4b is lowered after coffee powder is supplied into an extracting cylinder 5a, and the extracting cylinder 5a and a filter support 11 are raised and fitted to a coffee powder compressing piston 6. The air within the hot water supplying cylinder 4a is compressed by the driving piston 4b to pressurize the hot water within the cylinder 4a, and the coffee powder layer is compressed by the compressing piston 6. Thereafter, a pressure control valve 9 is opened, the pressurized hot water is passed to the coffee powder layer within the extracting cylinder 5a through a piston filter 10 to extract a coffee liquid. |
