The system has modular flat and corner bricks (10) for the top course, where the inside surface of the brick has a triangular section, lateral protrusion (15), which provides a supporting ledge for the oven roof panel (14). The top brick has a stepped outer top corner (18), which acts as a ledge onto which inserts (19) of various sections can be installed, to give the oven a flat outer surface or a rounded or angular cornice. Tapered wedges (20) can be inserted between the ledge and the insert to adjust the cornice. The outer surface (21) of the bricks can be grooved to provide good keying for a coat of mortar.
