A method for preparing cooked pasta which includes mixing a flour with propylene glycol alginate and water, extruding the mixture to obtain a pasta shape, cookin g, acidifying, packaging and pasteurizing the shaped product without any drying ste p. The packaged product is ready to serve for consumption.
