An assembly for extracting a liquid from solids, especially for juicing fruit and vegetables and consists of a pump (1) which lifts the fruit or vegetable through a riser pipe to a height of 5 m or more, and a funnel (12) releasing the fruit or vegetable into a tube (2). The tube (2) has a perforated (3) sieve wall and is inclined beneath the funnel. The tube (2) is divided into sub-sections, each with an individual drain outlet (4, 5, 6). The novelty is that: (a) the tube (2) is straight and inclined at an angle of 70 to 80 degrees to the horizontal; (b) the tube (2) is made of perforated sheet metal sections, each being open in the direction of flow; (c) the tube (2) comprises a number of discrete cassettes (7) each surrounded by a mantle (8); (d) following removal of the juice, fruit or vegetable leaving one cassette (7) is released to the next cassette (7) or a holding receptacle (21); (e) fluid extracted in each cassette is captured by the mantle (8) and drained; (f) the cassettes are removable from each mantle (8).
