<p>The invention concerns a method for concentrating solutions such as grape must, characterised in that it consists of the following steps: bringing the solution to be concentrated, taken at storage temperature, above a tank to diffuse it in sheet, by gravity and at atmospheric pressure; force the resulting diffused solution to trickle down around heating elements; maintain the temperature of said heating elements at about 80 °C to produce partial evaporation of the solution without allowing the temperature of the final concentrate to exceed 50 °C; mechanically extracting the resulting vapours by generating inside the tank an current from an intake of cold and dry air according to an adjusted flow rate to avoid re-condensation while limiting their velocity; recuperating the concentrate at the bottom of the tank and sending it back to generate a continuous concentration cycle.</p> |
