Amphiphilic compounds of formula (S)-(A) (I) in which A = optionally substituted hydrophobic hydrocarbon chain and S is a glucoside reside linked to A by way of one of its O atoms, are prepared by reacting a first alcohol with a chain A and at least one glucoside containing the residue S in the presence of an acid catalyst and a second alcohol, different to the first alcohol, containing a short hydrophobic carbon chain. The process for preparing compounds (I) in which A = a hydrophobic carbon chain (saturated or unsaturated, linear or branched, optionally substituted with cyclic, heterocyclic and/or functional groups) and S = a glucoside residue in linear or cyclised form bound to A by way of one of its O atoms, comprises (a) mixing at least one first alcohol comprising the chain A and at least one glucoside comprising the residue S, with the addition of a second alcohol which is different to the first alcohol and which contains a short hydrophobic hydrocarbon chain; and (b) reacting the mixture from (a) in the presence of an acid catalyst.
