A process for processing mussels such that following harvesting and purification, the mussels retain their juices inside the shell. The mussels are purified and washed before being debyssed in a debysser (9). The mussels are placed in a retention tank (12) containing oxygenated ultraviolet treated water. The water is maintained at a salinity exceeding the normal threshold. The mussels are retained for an appropriate time to filter feed and regrow the previously removed byss. Following this the mussels are packed (16), cooked (20), cooled (25), frozen (30) and stored (35). <Fig. 1> |
