A confection based on chestnut flour is made from uncooked flour mixed with honey, e.g. at a ratio of 1 kg of chestnut flour to 660 g of honey, depending on the latter's moisture content. Spices, flavourings or crispy ingredients can be added to the mixture, which can be mixed by machine, with the slight heating caused by the mixing blade helps to mix and shape the product without altering its qualities. The mixture can be formed, e.g. into chestnut-shaped portions or into bars or blocks, and when not individually wrapped they can be dusted with chestnut flour to keep them from sticking together. Gives a product which keeps for several weeks, is wholesome and energy providing; the use of uncooked chestnut flour avoids loss of vitamins or enzymes. |
