PROBLEM TO BE SOLVED: To provide a method for producing a high quality roux product enabling flavor, etc., of a raw material, easily lost and degraded by a high temperature treatment, such as the flavor of dairy products and an extract of vegetables and fruits to effectively manifest itself at maximum. SOLUTION: This method for producing a roux is carried out by using two batch type heating means 1 and 2 installed so as to communicate to each other, carrying out a heating treatment of a part of an oil and fat, and flour so that the material temperature may be >=100 deg.C in the heating means 1 to produce a flour roux, transferring the flour roux to the heating means 2 and further washing the treated material in the interior of the heating means 1 by introducing the remaining oil and fat in a fluid state to the heating means 1, and transferring the oil and fat to the heating means 2 and optionally adding other raw materials to the heating means 2 so that the flour roux in the heating means 2 may be cooled to 50-70 deg.C, adding flavoring raw materials such as dairy products, sap of meat, fish and selfish, vegetable, fruit, etc., an extract, bouillon, spice, curry powder and seasoning to the heating means 2, and heating the raw materials obtained by adding the flavoring raw materials to the flour roux in the heating means 2 so that the temperature of the material may be >=70 deg.C. |
