PROBLEM TO BE SOLVED: To prepare a composite seasoning having excellent taste and flavor of tangle and/or fish and shellfish, free from harsh salty or acid taste, giving mild and ripe taste to the palate and producible on an industrial scale and provide a process for the production of the seasoning. SOLUTION: This composite seasoning is produced by using say sauce, Mirin (sweet Japanese glutinous rice wine for seasoning) and freeze-concentrated tangle extract and/ or freeze-concentrated fish and shellfish extract as main raw materials. The process for the production of the seasoning includes the compounding of at least two components among say sauce, Mirin and the freeze- concentrated tangle extract and/or freeze-concentrated fish and shellfish extract and the ripening and/or the heating of the mixture. |
