PROBLEM TO BE SOLVED: To obtain the subject dessert yogurt having curry-like taste, flavor and palatability, holding the taste and flavor of yogurt, containing living lactobacillus and servable as a dessert or a food substitute for satisfying the appetite by compounding a yogurt with a curry sauce containing ingredients and sterilized in a retort and sealing the mixture in an aseptic atmosphere. SOLUTION: The objective dessert yogurt is produced by compounding yogurt with preferably 5-40% of a retort-sterilized curry sauce containing ingredients and filling the mixture in an aseptic atmosphere. The retort sterilization is preferably carried out at 100-150 deg.C for 30-180 min. The curry sauce containing ingredients is preferably compounded with a thickening polysaccharide in an amount of 0.1-1%. The thickening polysaccharide is preferably the single use of xanthan gum or a combination of xanthan gum and other thickening polysaccharides. |
