PROBLEM TO BE SOLVED: To obtain Chawan-mushi (custard-like egg and vegetable dish steamed in a cup) in a cup excellent in taste, texture and nutritive value without damaging fresh taste and flavor of a sauce liquid by filling a cup with an egg mixture obtained by stirring and mixing the egg with added water and seasonings and treating the cup with the egg mixture under a specific condition. SOLUTION: This Chawan-mushi in a cup is obtained by pouring an egg mixture obtained by stirring and mixing the egg with added water and seasonings into a cup, further pouring a broth sauce liquid or a sauce liquid to the cup before or after pouring the egg mixture, heating and steaming the filled cup to separate to upper and lower two layers comprising gelled egg solid at the upper layer and the broth sauce liquid or the sauce liquid at the lower layer separated by the difference of specific gravity, cooling the separated product, and capping the cup. The sauce liquid is preferably the one obtained by using a colored material such as Undaria pinnatifida and Spinacia oleracea. |
