摘要 PROBLEM TO BE SOLVED: To provide a method for seasoning fish meat for producing seasoned fish meat food such as boiled cube by seasoning small pieces of fish meat, mainly bonito, tuna, etc., readily liable to fall with a seasoning solution using soy source as a base. SOLUTION: A dipping tank 3 is heated with weak heat by passing high- temperature steam through steam flow paths 5 and 5' provided in the circumference of the dipping tank 3. Thereby, seasoning solution 4 put in the inside is heated to high temperature of about 90-98 deg.C without vigorously boiling the seasoning solution 4 and baskets 2 in which a prescribed amount of small piece- like fish meat is put are superposed in multistage and immersed into the high- temperature seasoning solution 4 and small piece-like fish meat is immersed into the seasoning solution 4 in a prescribed time while jetting a gas from a gas jetting nozzle installed on the bottom of the tank 3.
