PROBLEM TO BE SOLVED: To obtain a coloring matter for foods such as animal meat, fish meat ham, sausage, etc., effective in a temperature range from a low temperature to a high temperature. SOLUTION: A coloring matter for food comprising a smoked liquid and xylose as main components is produced. A fragrance suppressing smoked liquid reduced in phenols is preferable as the smoked liquid. When a smoked liquid mainly for providing a smoke smell is combined with xylose, the mixture colors in a wide temperature range from a low temperature of about 30-40 deg.C to a high temperature of >=100 deg.C and can color a food under various cooking conditions. Since the coloring matter colors especially even at a low temperature, coloring treatment can be easily carried out in a house using a microwave oven. Since a packing material impregnated with the coloring matter provides a smoke smell besides coloring properties, it is suitable for packing materials such as hams, etc. |
