PROBLEM TO BE SOLVED: To obtain the subject composition by including liquid oils and fats and a specific polyglycerol fatty acid ester, having cold resistance (freeze resistance) in spite of a high oil phase ratio, usable for a wide use including a frozen food. SOLUTION: This composition comprises oils and fats liquid at normal temperature (20 deg.C) and a polyglycerol fatty acid ester which comprises 5-50%, based on total fatty acid amount, of 8-22C unsaturated fatty acids as a constituent fatty acid and has <=3 HLB value to provide an edible oil-in-water type emulsion such as mayonnaise and dressing. |
