Procedure for precooking rice paellas. Use is made of a disposable or recoverable vessel similar to a conventional paella pan, and in this a conventional precooking of all the ingredients of the paella is carried out. The vessel with its contents is then placed into a bag which is hermetically sealed and to which vacuum is applied. Next, the bag is placed in an autoclave for cooking-sterilization of its contents. At the end of the cooking-sterilization time, which varies depending on temperature, the size of the vessel and the ingredients, the paella is cooled and the bag is then taken out of the autoclave and put into a cardboard box for storage and distribution. The paella precooked in this way keeps in perfect condition at ambient temperature for a long period of time, more than 1 year. |
