Apparatus is claimed for trussing poultry carcasses using an elastic band twisted into a figure of eight shape. The bird (1) is positioned on its back on a plate (3) carried on a conveyor (4) moving feet first towards the trussing device. Its feet (10) and wings (13) are held close to its body by arms (6). The elastic band (2) is held on hooks (7-9) in a figure of eight shape in a plane perpendicular to the direction of travel (YY') of the bird. The bird's feet and parson's nose (11) pass through the lower loop (2A) of the band. The structure (14) holding the band then tips around a horizontal axis (XX') so the second loop (2B) passes over the head end and wings of the bird.
