Apparatus for treating fruit to be crushed with their skin comprises means for conveying fruit between a collection means (12) for fruit after harvesting and a crusher (14). The conveyors (18, 20) are situated between a drying unit (24) between (12) and (14), the unit having means for generating hot air flow, to eliminate the surface humidity of the fruit without drying the pulp, as well as means for circulating (26) and heating (30) air. Also claimed is a process for treating fruit to be crushed with their skin comprising conveying fruit between means for collecting and means for crushing them, the fruit being subjected to a stream of hot air during conveying, at a temperature to dry them and to eliminate surface humidity without drying out the pulp.
