Apparatus for positioning poultry, prior to trussing the wings and legs of a slaughtered, plucked and gutted bird, comprises at least one mobile component (1) consisting of a supporting plate (2), (1) being coupled to a conveyer for moving (2) along a preferably rectilinear trajectory which is divided up into functional zones for shaping and maintenance, followed by a zone for trussing. The mobile component additionally has means for holding the wings (4) and/or feet (5) which are loaded onto (1) in such a way as to cooperate with plate (2) in order to maintain the axis of the bird in alignment with the axis of the plate (2), excluding any other form of handling. (4) and (5) are at least in their respective zones and are kept in contact with stationary components (6) to ensure that (4) and (5) go from an open position to an 'applied' position.
