Slaughtering poultry by electric current comprises varying one of the current parameters (e.g. voltage, frequency or current strength) during at least part of the duration of the electric shock, in order for the current to cause increased contraction of the pectoral muscles from a relatively low level to a high one. The slaughtering apparatus used is also claimed.
