PROBLEM TO BE SOLVED: To provide a proper production method for producing 1,1-GPM (1-0α-D- gluconopyranosyl-D-mannitol) and 1,6-GPS(6-0-α-Dgluconopyranosyl-D-sorbitol) and a mixture of 1,1-GPM with 1,6-GPS which have extremely high purity in high yield in large amounts. SOLUTION: This method for producing a phase rich in 1,1-GPM and/or 1,6-GPS comprises dissolving hydrogenated isomaltulose or a mixture containing hydrogenated isomaltulose into water at a high temperature, cooling the resultant solution over a prescribed temperature range sufficient to obtain a desired phase composition to crystallize the solution and then, separating a phase rich in 1,1 GPM from a phase rich in 1,6 GPS.
