PROBLEM TO BE SOLVED: To obtain powders, extracts, concentrated extracts and dried extract powders of medicinal carrots which have little bitter taste and can easily be used and to provide the method of producing them. SOLUTION: Medicinal carrots having little bitter taste are obtained by treating medicinal carrots with a low polar organic solvent which removes other bitter components without eliminating saponin of the major component in medicinal carrots. The extract is extracted from the medicinal carrots, and the concentrated solution and the dried powder are obtained from the extract. In comparison with the medicinal carrot extract obtained by usual processes and its concentrated solution or dried powder, they have little bitter taste and are used for various foods such as medicinal carrot tea, drink, confectionery, bean curd, soup and jelly without losing original characteristics of these foods. |
