SOLUTION: This soybean curd refuse miso is obtained by transferring boiled soybean refuses to a bamboo basket, etc., to drain the boiled soybean refuses, sufficiently mixing the drained refuses with rice malt and salt, charging the mixture into a fermentation vessel and subsequently fermenting the mixture in the vessel for about eight months. |
