PROBLEM TO BE SOLVED: To solve a problem of bad handling property while maintaining a high content of diglycerine fatty acid monoesters which consist of 14 to 22C satd. fatty acids as the structural fatty acids. SOLUTION: By this granulating method of an emulsifier, diglycerine fatty acid monoesters are granulated into beads or a powder. The fatty acids which constitute the esters are one kind or a mixture of two or more kinds of 14 to 22C satd. fatty acids. In this process, a glycerine org. acid fatty acid ester having 12 to 22C satd. fatty acid as the structural fatty acid and/or a sorbitane fatty acid ester are compounded in the esters above described.
