The invention falls within the sector of processes and plants for the processing of food products, in particular fruit. The process envisages enzymatic inactivation of pure by means of heating in a recirculation circuit kept full of purée. The plant comprises a pump (5) which introduces the purée emerging at room temperature from a strainer (4) into the recirculation circuit (6) through a device (9) for mixing the purée.
