PROBLEM TO BE SOLVED: To produce a Miso (a fermented seasoning paste of soybeans, rice, barleys, etc.) containing a mushroom, capable of quickly brewing in a short period and having UMAMI (a good taste) and flavor imparted thereto and a softened and mildened salty taste by grinding the surfaces of soybeans and rice grains until specified yields are attained, mixing a mushroom flour therewith, fermenting and brewing the resultant mixture. SOLUTION: This Miso containing a mushroom is produced by grinding the surfaces of soybeans and rice grains which are raw materials until the respective yields thereof reach 80-95%, mixing a mushroom flour, a mushroom paste or a mushroom ingredient for the Miso containing the mushroom, then decomposing the soybeans, rice grains and mushroom and improving taste and flavor. |
