PROBLEM TO BE SOLVED: To obtain frozen vegetables and fruits where quality being close to that of the unfreezed ones is kept after defrosting by containing an erythritol. SOLUTION: The erythritol is contained in the vegetables and fruits by favorably, more than 0.5 wt.%. The adaptable vegetables and fruits are rood crops such as a carrot, a radish, a burdock or a bamboo shoot, etc., leaf vegetables such as a cabbage or a Chinese cabbage, any kind of vegetables such as in onion, etc., and also fruits such as an apple, a yellow peach or a pear, etc. A method for containing the erythritol in the vegetables and the fruits is favorable to be the one for executing impregnation while branching by an aqueous solution where the erythritol is added. |
