PROBLEM TO BE SOLVED: To obtain a hot-filled product and aseptically filled product resistant to the quality degradation independent of the storage condition even if the adjustment of solid concentrator, salt concentration and pH is relaxed, by using a polyglycerol fatty acid monoester having high monoester content. SOLUTION: The objective product can be produced by using a polyglycerol fatty acid monoester in which the constituent fatty acid is one or more acids selected from among caprylic acid, capric acid, lauric acid and myristic acid, the total amount of the acids is >=70 wt.%, the constituent polyglycerol part is composed of di-, tri-, tetra- or pentaglycerol, the total amount of the glycerol is >=90 wt.% and the monoester content is >=50 wt.%. |
