PROBLEM TO BE SOLVED: To obtain a composition for bonding a food, capable of binding or bonding various food raw materials or food pieces in combination of the same kind or different kinds, reducing the loss of ingredient, improving the added value of the ingredient, causing neither a different taste nor an offensive smell and controlling a time for completing binding/bonding. SOLUTION: This composition for bonding a food is obtained by formulating 5-85 wt.% of an alginate, 7-65 wt.% of a coated acid agent prepared by coating an organic acid with 20-95 wt.% based on the organic acid of oils and fats or a protein, 0.5-20 wt.% of a pH adjuster and 0.5-22 wt.% of a slightly water- soluble calcium salt. A bonded food is obtained by using 0.5-10 wt.% based on a food raw material or a food piece of the composition and bonding the food raw material or the food piece. |
