PROBLEM TO BE SOLVED: To provide a method for processing the testes of Pacific cods or Alaska pollacks, capable of solving such a conventional problem that the testes quickly deteriorate when softened and this causes very difficult problems in their storage and transportation. SOLUTION: This method is conducted by immersing the testes of Pacific cods or Alaska pollacks into an aqueous solution containing transglutaminase, thus preventing the testes from being softened and effectively avoiding the deterioration in quality. The deterioration is more effectively precluded by using betaine and trehalose in addition to transglutaminase. The testes may also deteriorate when frozen and/or defrosted, and such a deterioration can be prevented by a similar processing to the above. |
