PROBLEM TO BE SOLVED: To provide a high-speed air blowing oven for blowing steam for process cooking to food supported by a conveyor belt at a practically fixed speed. SOLUTION: This high-speed air blowing oven blows the steam for cooking whose temperature and humidity are variable matched with cooking conditions to the food 68 on a conveyor 13 through the upper and lower radiation ports of nozzle plate assemblies 44 and 46. The port in the shape of a slot is extended in the side direction of the conveyor and communicated with an upper plenum 47 and a lower plenum 45. Air is supplied to the respective plenums by a blower 48 for drawing the steam for cooking from a low pressure passage 39 provided on the side of the conveyor. A heating means 41 is provided inside the passage 39. Adjacent risers are communicated with the passage 39 and are separated so as to form a low pressure flow channel for bringing the sudden speed change of the steam for cooking for turning a turbulent flow state to a low level.
