摘要 A procedure for processing mushroom flesh is disclosed which includes the steps of: blanching the mushrooms to reduce their flavour content, reducing their moisture content to between 50 % and 75 % and mincing them. In this way a stable product is produced which can be combined with meat and/or vegetables to produce a rissole or pattie.
