Dirt and/or unwanted ingredients are separated out by delivering the vegetables at the top end of an inclined sieve (2) vibrated by a drive mechanism. As the vegetables travel down the bottom (10) of the sieve, a current of air is delivered in the upwards direction to the sieve openings (8), giving a sifting action. The fraction (16) of the vegetables free of dirt and/or undesirable ingredients is entrained upwards and separated from these ingredients, which drop through the sieve openings to form a waste fraction (20). The first fraction (16) is then separated from the air current.
