PROBLEM TO BE SOLVED: To effectively produce xylitol useful as a sugar substitute, etc., by cultivating a specific mutant cell of a microorganism belonging to the genus Candida under the optimization of environmental conditions such as the composition of a culture medium, pH, temperature, dissolved oxygen concentration, etc., and under the control of mutant cell concentration. SOLUTION: This fermentation process for the maximum production of xylitol by using a mutant cell of Candida parapsilosis (deposit number KCCM-10088) is carried out under the following optimum conditions to obtain xylitol at high productivity: the concentration of mutant cell of 15-35 g/L obtained by the centrifugal separation of cells grown in a xylose medium or by the rapid accumulation of cells in fermentation broth; a fermentation medium composition for the maximum production of xylitol composed of 5-12 (w/v)% xylose, 0.2-2.0 (w/v)% yeast extract, 0.2-2.0 (w/v)% ammonium sulfate, 0.2-2.0 (w/v)% KH2 PO4 and 0.01-0.2 (w/v)% MgSO4 .7H2 O; a dissolved oxygen concentration in the medium of O.1-5.0%, an oxidation-reduction potential of 50-150 mV, a pH value of 4.5-5.5 and a fermentation temperature of 27-33 deg.C. |
