PROBLEM TO BE SOLVED: To provide a cold-rolling method for obtaining a steel sheet having high glossiness by executing high-speed rolling using the same emulsion of rolling oil for either of ferritic and austenitic stainless steel sheets. SOLUTION: The diameter of a work roll is taken as 50-120 mm, the viscosity of the original liquid of the emulsion of rolling oil as 6 to <20 cSt, the average particle size of the emulsion of rolling oil as <2μm and cold rolling is executed at >=60 mpm while supplying the emulsion of rolling oil to rolls and the steel sheet. In the case of the ferritic stainless steel sheet, at the time of rolling in at least one pass before finish rolling pass, the supply of the emulsion of rolling oil to the steel sheet is stopped, the original liquid of the rolling oil is supplied. In the case of the austenitic stainless steel, the original liquid of the rolling oil is supplied to the steel sheet on the inlet side of the 1st pass and the emulsion of the rolling oil whose average particle size is <2μm is supplied to the rolls.
