PROBLEM TO BE SOLVED: To obtain the subject retort food that has excellent taste, good texture and resists solubilization, even when being boiled, by treating dried pasta with steam heat, charging the treated pasta and the seasoning liquid for pasta in retort sterilization vessels and subjecting them to the retort sterilization. SOLUTION: Dried pasta is heat-treated with steam under atmospheric pressure or under the pressurized conditions, retort vessels are filled with the heat- treated pasta and the seasoning solution for the pasta, tightly sealed, then subjected to retort sterilization. The water content of the steam heat-treated pasta is preferably set to 5-25 wt.%. In another case, the steam heart treatment is carried out under the atmospheric pressure, then the pasta may be dried on its surface. |
