Machine to produce sausages with twisted casing, comprising a feeding pump (1) for minced meat (2), a skin dressing tube (4) located at the exit of said pump (1) in order to sustain a flexible casing (5) and to consent the introduction of meat (2) into the casing (5) itself for the formation of a continuous sausage (50). A device of separation and feed (6) of the sausage (50) provided with mobile pincers (22, 23) that can be brought near to each other is located at the exit of the skin dressing tube (4) in order to advance the sausage and to nip the casing (5) so as to form a squeezing point (52) between each sausage (51) downstream and the rest of the sausage upstream (50). The machine provides for controlling means (48) to produce the rotation of the skin dressing tube (4) for the twisting of the casing around said squeezing point in such a way as to obtain a separation tang between a sausage downstream and the rest of the sausage upstream. Said controlling means (48) are synchronised with the movement of said pincers (22, 23) in order to control the rotation of said skin dressing tube (4) only for a predetermined period of time between the formation of a squeezing point (52) and that of the subsequent squeezing point.
